Properties

E322: Fluid lecithin obtained from sunflower seeds. It is a natural emulsifier due to its high phospholipid content. It reduces surface tension allowing milks, cocoa, proteins instantaneization. It also reduces chocolate viscosity for better homogenization and processability. In bakery applications, it lubricates and binds the dough for better handling and it is also used as an unmolding agent in biscuits and sprays.
Available in conventional and organic quality.
