Properties

It is called “extra hard cheese”, with a maximum moisture content of 36% according to FAO food standards. Fat content on dry matter (FDM) minimum value is 32%. Ripening time from 8 months is convenient to obtain typical ivory colour and a granular and slightly brittle texture; then it becomes the characteristic dry hard cheese with rind. Final product is offered in wheel and block shapes, while consumers acquire it in portions or already grated.
Product available as a natural, sustainable and organic food ingredient.
