Properties

Monohydrate dextrose. It is obtained from starch hydrolysis. Dextrose among many other properties, reduces water activity, decreases freezing point (ice-cream) and is fermentable. It is also a reducing sugar (caramelization and Maillard reaction).
Available from wheat or corn origin, and different particle sizes.

Applications

Biscuits, syrups, pastries, ice-creams, sausages, beer, in sports products as an energy source, etc.
