Properties

Mozzarella cheese is an unripened cheese according to MFFB (moisture on a fat-free basis) following FAO food standards. Regular DM (Dry Matter) is 50%. It has an elastic-to-supple cheese body after “pasta filata” processing, which gives a fibrous structure and mild milk-
like flavor. Final users find it grated or sliced. Many variations depend on their fat content and also on their low-lactose values content <0,01%.
Product available as a natural, sustainable and organic food ingredient.
