E-414 : Acacia gum is a dried exudate obtained from the stems and branches of acacia trees. It consists mainly of high molecular weight polysaccharides and their calcium, magnesium and potassium salts. It is neutral in both color and flavor and highly soluble fiber (90%). It has thickening, stabilizing and emulsifying properties. It supports concentrations of up to 25% with hardly any modification in the viscosity of the final product. It also increases body and mouthfeel in low or sugar-free beverages. Its filmogenic properties prevent migration and retain water in bakery doughs. It is also used for encapsulation. It is heat tolerant and stable in fermentation and acid pH processes.
It is marketed purified and in powder form, after spray-drying.
Available in different qualities (standard, concentrated, instant and also organic quality) and origins (senegal or senegalensis).
