Cellulose derivatives

E-461: Methylcellulose is an hydrocolloid processed from cellulose. It is soluble in cold water. At cold temperatures it gives viscosity, but its most characteristic property is that, unlike other hydrocolloids, it forms firm and very firm gels when heated. That is why it is used as a gelling agent in processes that need to keep the shape of the product or fillings during the cooking or the thermal treatment (baking, frying, etc.). The gelling is reversible when cooled.
It has film forming properties, reducing, for example, the oil uptake when frying.
Recommended for vegan products to create a strong bite and to improve and get a meat-like texture. It is also used as an emulsifying agent.

E-464: Hydroxypropyl Methylcellulose is an hydrocolloid processed from cellulose. It is soluble in cold water. When cold it gives viscosity, but its most characteristic property is that, unlike other hydrocolloids, it forms from semi-firm to soft gels when heated.
It improves moisture retention, which helps to avoid drying in bakery and pastries. It is recommended for gluten-free bakery and pastries. It is also used as an emulsifying agent and as a foam stabilizer.
