Sorbitol

Properties

E-420: Sorbitol is a polyol obtained from glucose. Its sweetener power is about 60, without undergoing any browning reaction (Maillard).
Commonly used as a sweetener in sugar-free products, it’s excellent moisture-stability effect, etc.
Available as a non-crystallizable liquid and as crystalline powder.

Applications

Baked products, confectionery, juices, surimi, etc.

Maltitol

Properties

E-965: Maltitol is a polyol obtained from maltose (disaccharide formed from two units of glucose). Its sweetener power is around 90 and it doesn’t undergo any browning reaction (Maillard).
It is commonly used as a sweetener in sugar-free products with multiple applications.
Available in liquid form (maltitol syrup) and powder form (different particle sizes).

Applications

Sugar-free confectionery (chewing gums, candies…), ice-creams, candied fruit, jams, biscuits, chocolates, etc.

Isomalt

Properties

E-953: Isomalt is a water soluble sweetener, which is obtained from sugar beet with the same sweetness profile as sugar but with a half of its intensity. Suitable to substitute sugar in all kinds of sugar-free applications in a 1:1 ratio. Due its very low hygroscopicity it doesn’t keep humidity and stabilizes moisture sensitive formulations such as biscuits and hard boiled candies. It is stable to heat treatments, acid pH and enzymatic hydrolysis. It doesn’t produce a Maillard reaction during baking. The product is tooth friendly and forms translucent coatings that boost shine and color in applications such as chewing gum, jelly beans and colored chocolate lentils.
Available in different qualities (different particle sizes, solubility, etc).
