E-414: Arabic gum is a dried exudate obtained from the stems and branches of acacia trees. It consists mainly of high molecular weight polysaccharides and their calcium, magnesium and potassium salts.
E-415: Xanthan gum is a high molecular weight polysaccharide gum produced in a pure-culture fermentation of a carbohydrate with strains of purified, dried and milled Xanthomonas campestris. Its solutions are neutral.
This blend of Arabic gum and Xanthan gum is soluble in cold water and it is highly dispersible. It combines the emulsifying properties of the Arabic gum with the suspending properties of Xanthan gum. Recommended, for example, to maintain the suspension in juices with pulp, or to compensate for the texture loss in sugar-free or reduced sugar drinks. It is also used in syrups for toppings and ice-creams.

E-418: Gellan gum is a high molecular weight polysaccharide gum produced in a pure-culture fermentation of a carbohydrate with strains of purified, dried and milled Pseudomonas elodea.
This blend of Arabic Gum and Gellan gum is soluble in cold water and it is highly dispersible. It is activated with high temperature or with heat treatment and it combines the emulsifying properties of the Acacia gum with the suspending properties of Gellan gum. Recommended, for example, in plant-based drinks to avoid the precipitation of peels, particles, etc.
