Properties

E-415. Xanthan gum is a polysaccharide obtained through the fermentation of sugars by a bacterium called Xanthomonas campestris. It is used as a thickener and stabiliser due to its ability to form gels when mixed with water. Soluble in both cold and hot water. It has synergy with guar gum, resulting in very pleasant and long-lasting creamy textures.
