Properties

E-412. Guar gum is a polysaccharide extracted from the seeds of the plant Cyamopsis tetragonoloba L. (a legume). It is used as a thickener and stabiliser due to its ability to form gels when mixed with water. Cold-soluble. Prevents syneresis and provides a smooth, creamy texture. Has synergy with xanthan gum, resulting in very pleasant and long-lasting creamy textures.
Available in various viscosities and grades (standard, premium, etc.).
