Gelatin is a natural protein obtained from the partial hydrolysis of collagen from animal connective tissues, such as skin, bones, tendons, etc. In addition to its considerable nutritional value (with around 90% protein and providing up to 8 of the 9 essential amino acids), gelatin is a hydrocolloid with the ability to form a thermo-reversible gel with a neutral, transparent color.
Available from both bovine and porcine sources, with different bloom strengths, particle sizes, etc.
Confectionery and sweets, desserts, dairy products, bakery products, meat products and sausages, wine and beverages. Also used in pharmaceutical applications (hard and soft capsules, tablets) and in pet food (wet and dry).
